Elf On the Shelf

Its been a good run, but Henry must return to the North Pole (closet) tomorrow night for an entire year. Poor guy, its probably pretty darn cold. Mommy and Daddy will enjoy the vacation from scrambling out of bed at 6am to quickly move the little bugger before little feet hit the floor. Henry never forgot to move, but it was pprreeeeetttty close a couple times. Despite the close calls we love Henry, Charlee loves Henry and it was something that we did as a family for Christmas, he brought a little Holiday cheer into our home. 

Tomorrow Night we're going to leave Cookies and Milk for Santa, we have some magic Reindeer Food and of course a carrot for the Reindeer, and we will be leaving Elf Donuts for Henry for his long journey home to the North Pole. Yes, Elf Donuts....Check it out.  I'm going to attempt to craft a little donut box out of cardstock to put them in, fingers crossed everything works out! If not...they'll be on the plate too!

Anyway this year was our first year with Henry so we're still getting to know his story and what he can do...He wasn't very creative with his hiding, but I just thought Id share some of the spots he did hide. If you have an elf and have a picture of the things he did please post a link and share them! I would love to see!

The Santa Key

The other day while cruising around Pintrest...(the greatest site for inspiration you will EVER find. If you don't already use it, you should start! as soon as you finish reading this post of course)...anyway the other day while I was looking for some last minute Holiday Ideas I came across this very cute key.


So simple and such a cute idea! Its a Santa Key, for the houses that don't have chimneys so that Santa can still get in to leave all the Good girls and boys presents. You can of course use any kind of key, write out or print off one of  the cute little sayings and be on your Merry way. If you're not the crafting type I hear you can buy the Santa Key's at Lawtons Drugs here in Halifax.

Christmas Crafting: Cork Tree

Only 12 more sleeps till the Big Guy in red makes his big visit,  12!! I don't know where the time went but holy mackerel it doesn't feel like Christmas. I'm finding it really hard to get into the Christmas spirit this year, my place isn't nearly as festive and there weren't many Christmas crafts done this year either. Pretty sure the lack of snow and +10 weather has something to do with that for me personally. I'M NOT COMPLAINING!! I like not having to shovel my car out, or spend 15 minutes bundling Charlee to go to the grocery store. But a little snow cover for Christmas wouldn't hurt, would it?

Today I had a free day to catch up on laundry, cleaning and BLOGGING! <3  As I was scrolling through the blogs I follow I came across the cutest Christmas craft that literally made my chin drop. A CORK TREE!!! I have had a vase full of corks sitting on top of my wine rack waiting to be used for something this cute.

So easy and a perfect little addition to any wine lovers gift! The idea came from the Stonewall Kitchen Website, my kind of website!!  It was one of their Holiday Tips of the Day. Be sure to take a look at the other tips, they are all great.




Here is my first cork tree for my house, Im sure there will be more to come.
Instead of using a small piece of tree I glued 4 corks together to form a base for it to sit on. I also liked the look of it without the base. If you don't have enough corks to create one of these you have 2 options...You can buy a bag of corks at the "Bottle Your Own Wine" store for $5. Option #2 ....Drink Up!  I like #2, Cheers!

Homemade Christmas Ornaments


I cant believe its been almost 2 weeks since I posted!! I apologize! In the past week or so I've been keeping busy, getting ready for the big Holiday and doing Cupcakes for the wag jag deal and other orders. Finished the 2 most important people on my Christmas list and now to add to gifts and figure out what the heck to get my parents and the in laws...I'm open to any suggestions!

So when I decided on the "theme" for our tree, about 4 years ago, I really wanted to do Gingerbread men and it had to be "country-ish". I looked everywhere for gingerbread men decorations ANYTHING would have done...I know it might be hard to believe now because they are everywhere, but there was nothing. So I had to make my own! I found a recipe online for Gingerbread ornaments, which was pretty much a gingerbread recipe with no egg. I looked last year through all my recipes and can't find the exact recipe I used...frustrating! But here's a link to a very similar one, with instructions!

Every year I put 3 trees, our main tree, a smaller one in the kitchen, and a tiny one in Charlee's room. Last year the tree in the kitchen got a huge makeover, from gold and red to Kitchen themed! What's on a kitchen themed tree? Started out with Cinnamon Ornaments, Gingerbread and Heart Shaped.

Homemade Hot Cocoa

Anyone who lives in the Maritimes will be cursing me...I'm about a day too late with this recipe! I'm sorry!! But luckily its only the FIRST snow of winter, and there will be lots more where that came from. I found this recipe written on a post-it in my recipe binder, and quickly pulled it out when Tyler and Charlee were outside playing and I realized....we ran out of Hot Chocolate!Crisis Averted.

Nothing says I Love You like a mug of Hot Chocolate after an afternoon in the Snow.
Homemade Hot Chocolate (single serving)

1 tbsp cocoa powder
2 tbsp sugar
2 tbsp water
1 c Milk
bit of vanilla

Heat cocoa, sugar and water in a pot for 2 minutes on low heat. Until the sugar and cocoa are dissolved.
Chocolately Goodness
Add Milk (I had some cream in the fridge so I added about 1/4 c of that to add some richness) heat to desired temperature. Add vanilla and Marshmallows just before serving.

Holiday Cookie Recipes!

When I was young I never understood why Mom would bake for 3 days...only to put everything in the freezer! The past couple years since we've moved back to Halifax and had "our own" Christmas' I'm finally starting to understand. Every year I think I add another recipe, this year I'm on the hunt for a good gumdrop cake...myyyy faaavvv! But for now I will share these 2 recipes that are made every year in our house....For the freezer!

Delicious Dry Rub

So a few weeks ago we decided to have some friends over for supper and I was going to try something I had never done before, but ALWAYS wanted to do....turn my BBQ into a smoker!!! So anyway, this is a 2 day process, soaking wood chips, making dry rub, marinating for 24 hours and cooking/smoking for 6 hours. And thats the kind of stuff I love! I was making pulled pork sandwiches for supper so we used a Pork Shoulder,and applewood chips for the "smoke". My absolute favorite Chef on the Food Network is Michael Smith, and it was here that I got the inspiration and tips for smoking a pork shoulder.

 I realize smoking pork shoulder for 6 hours isn't really a great entertaining recipe so I'll just link you up in case your interested. BUT one thing that everyone can use is a really great Spice Blend. This one is simple, cheap and works on pork chops, chicken, in steak marinade, I used it on ribs this past weekend and on roast potatoes! Multi Purpose!

Mini Potato Galettes

This is another recipe from the Our Compliments:Inspired  Magazine, Christmas Edition. I love free magazines especially when they have fantastic recipes to try. Around Christmas seems to be the time that people do the most entertaining, if you are one of those people..take a trip to Sobeys and grab one of these magazines. You probably see them all the time and never bother to pick it up, I suggest you do JUST ONCE...and you'll be hooked.

So the other night for supper I decided I would try this recipe, Cheese and Potatoes...can't go wrong in my house. There was a little more prep than just making mashed potatoes but it was worth it, they were delicious and would definitely impress at a family dinner or potluck.

Cabbage Rolls

Just like the mama used to make! This was my first time trying this recipe, one that mom used to make when we were younger, one of my Grampy's Favorites! When I was a cook in Alberta one of the Chef's I worked under was part Ukrainian and the cabbage rolls he made were unreal! But like any recipe, nothing could measure up to Mom's, and its probably just because shes mom and anything she makes is amazing!

Pumpquiv's and Roasting Seeds...Happy Halloween!

After all the decorating, assembling of treat bags, Gorey Cupcakes and Halloween Parties....Halloween has finally arrived. Happy Halloween To All my readers!! Thanks for following and reading, you are all Spooktacular! ....oh common I had to!

The House is starting to look half normal again, and a little bare. One thing I love about Halloween is that if you don't dust...who cares!? It just adds to the effect, well now that everything is coming down I'm realizing I need to dust. Boo!

Without fail it is FREEZING here in Halifax. I sent Charlee to PreSchool with her winter jacket, hat and mittens. If you don't live in Canada and you've ever heard that joke "In Canada you have to make the Halloween costumes big enough to go over a snow suit" ...its no joke. BUT! The kids still have fun and that's all that really matters.

Every year like most families we carve a pumpkin, seems to me we are starting a bit of a tradition here at the Cyr residence as well. The past 2 years we have carved the pumpkin to match Charlee's Halloween Costume. Another ongoing tradition since I was a kid was roasting the pumpkin seeds, Last year Charlee discovered she LOVED roasted Pumpkin seeds so this year she made sure to get every last seed out of the pumpkin guts. If you've never roasted Pumpkin seeds you should really try it, you can also add some popcorn seasoning to them with the salt to give them whatever kind of flavor you like.

How to On Roasting Pumpkin Seeds:

-Clean out your pumpkin and pick all the seeds out of the "guts"
-Rinse the seeds under some cold water to get the rest of the goo off, pat dry with paper towels.
-Spread the seeds on a baking sheet, sprinkle with salt (and popcorn seasoning if you wish)
-Cook on low (200) for about 40 minutes, checking every 10 minutes and giving them a quick turn
-They are ready when they are dried out and crunch when you eat them. Enjoy!

I love the fall! It is probably my FAVORITE season! (with a little mix of spring) the crisp air the fall activities, Christmas Shopping. All of it, LOVE IT!  This past weekend we went Apple Picking in the Valley, to Noggins Corner Farm. Anyone who lives in NS should definately take this in, Charlee loved it. You get the full experience, wagon ride up to the massive apple orchard, and then a wagon ride back down, to go to the pumpkin patch to pick a pumpkin. They have a corn maze, pony rides, playground, BBQ and picnic areas, It was a perfect family afternoon.

Last Minute Halloween Tips

I'm still alive!! Been a little MIA lately, busy getting ready for Halloween and the Halloween Party. So I've returned with a few more tips, starting with the ones straight from the house of Bre.

I noticed this year a lot of black spider webs, being used around businesses to decorate. I thought they looked great, so I went to the dollar store and took a look around and there they were. These (annoying) spider webs make the greatest decor, they can be really difficult to work with but they are worth it.

As all parents do, we want to introduce Charlee to as many different activities as we possibly can. Then when she's older she can decide what she liked and what she would rather give up. So this weekend we got her a pair of skates and took her to a local family skate, and she thought it was the greatest. She came off the ice once for a break, sat next to me and said "This is harder than I thought Mommy", but then got up and went back out!



Dressed Head to toe in pink and he wants sooo bad for her to be a lil hockey playin, football loving tom boy....gotta break it to ya Daddy, probably not going to happen.

French Toast Muffins

Our Thanksgiving weekend was pretty busy! Luckily Monday we were able to visit with my husband's family and just have a relaxing day. When I'm there and we're all chatting in the living room, I always sit in the same cozy chair, with a giant basket of magazines next to it. So I picked up the latest "inspired" magazine,  (those FREE ones you get at the entrance of Sobeys) and started flipping through, it was filled with so many great fall recipes. LOVE!! 

Lately Charlee has been complaining about not wanting cereal or toast for Breakfast (its boring) and the mornings she has Pre-School I just plain don't have time to whip up a batch of pancakes or bacon and eggs. So when I came across this recipe for Breakfast on the Go I made a mental note. When we got back to the city I went to Sobeys got my own "inspired" and starting cooking.

Halloween Tips {w/ printables link}

Yesterday Charlee and I started decorating for Halloween, I say started because we have quite a bi of work and usually spread it out over a couple days. Halloween is pretty big in our house, every year we throw a Halloween party. (surprise surprise!)  And every year I try and add a few more things to our decor, to make it a little bit better. As I was searching for new ideas this year I came across a few things I bookmarked, so I decided to share them with all of you!

Cupcakes Fit for A Princess

This weekend I had the honor of making cupcakes for Princess B! She celebrated her second Birthday and the fam and I took in the festivities, a great family BBQ! Pumpkin Spice Cupcakes

This is a very special and rare post!

Because I will be away next week and unable to take orders for Thanksgiving I am going to share a cupcake recipe!

 I will be sharing these cupcakes with my family over the Thanksgiving holiday and I hope you give them a try to share with your family as well. Of course I will be adding these cupcake to Bre's Cupcakes for anyone in Halifax that would like to order some after Thanksgiving. They won't replace the pumpkin pie at a Thanksgiving dinner, but they are definitely a good alternative for the Kids!

That season has arrived...Puzzle season!! Also known as Fall and Winter to most people. Puzzle season is the best, sit around and drink tea or the occasional glass of wine, and make puzzles and chat. Yes, like 80 year old ladies. =) Here is the first puzzle of the season, one to grace a man cave one day.

Pizza Pinwheels

Hey all! Just dropping in for a quick post with a quick recipe! Perfect lunch, or a snack for any day of the week. Great for lunch boxes for the young and old its... PIZZA PINWHEELS!!

No but in all seriousness these things are easy and very yummy. Got the recipe from Bestie J, she made them for A's Bridal Shower (you may have seen them on the menu there)  and they were a huge hit.  She was kind enough to let me in on her little secret and said I could share it, so here it is!

 

Pizza Pinwheels

1 can Pillsbury crescent rolls
pizza sauce
Shredded cheese (whatever you prefer)
Your favorite Pizza meats, chopped small

1) Open then crescent rolls dough and roll it out into one flat sheet.

2) Spread sauce over the dough, sprinkle with shredded cheese and diced pizza meats.

3) Roll the dough into a long log, and slice. Just as you would with cinnamon rolls.

4) Bake According to package directions on a lined cookie sheet.

5) Make for your next party or for your kids (or husbands) lunch box!

you can eat these straight out of the oven just like this, or you can melt more cheese over top. They also reheat perfectly and are great even when they're cold. Enjoy!

Flourless Chocolate Cake

Lets start this week off right! With CHOCOLATE! This flourless Chocolate Cake recipe is so rich and delicious its the perfect way to start a sunny Monday morning. I made these cakes for Sunday dinner I was bored annnnd I wanted to try a new and different recipe to share. Its the recipe out of the " Delicious Disney Desserts" recipe book, I've had this book for 2 years now and I think I've only ever made 2 recipes...but like I've said a million times I wasn't much of a Baker until this year.
When your ganache isnt thick enough and you use sugar in your tins...you come out with this delicious mess.

Bre's Chicken--Step By Step Dinner

This weekend was one of the first weekends in months my family didn't have something going on. Let me just say...it was wonderful! Friday we just hung out and got caught up on TV shows online, Saturday I felt like cooking. Not just cooking but making a really nice meal, trying a new recipe and of course enjoying it with friends. The great thing about this meal was I got it all ready in the morning, went out for a little family adventure, came home and were able to enjoy a full dinner party quality meal just an hour later.

The Menu

Carrot Slaw
Whipped Sweet Potato, with Maple Pecan Crust
Bre's Stuffed Chicken (kind of like a signature dish)
Sauteed Veggies
Classic Creme Brulee

Carrot Slaw
Like coleslaw but sweeter and appealing to a wider audience. Its one of the first the recipes I ever made all on my own as wee one, and the other day when I needed to use up the last of a 10lb bag of carrots this recipe came to mind. I made this the day before..

3 c Shredded Carrot
1/2 c Raisins
1/2 cup slivered almonds (optional)
1 c Mayo
1 tbsp vinegar
1 tbsp sugar
S&P
In a bowl mix the mayo (I used Miracle Whip and it tasted just fine), sugar, vinegar and S&P. Set aside. Peel and grate the carrots, pour the dressing over the grated carrot, toss and add the almonds and raisins. Cover and refrigerate 2 hours or Overnight.

Done...that's it! NEXT!

Whipped Sweet Potatoes with Maple Pecan Topping.
So the other day I was watching "Best Recipes Ever" on CBC and she was making an everyday holiday dinner and this was the side she was making. I said to my husband "I am making this for Thanksgiving this year". I was at the grocery store the other day and thought...I should probably test it out before making it my contribution to Thanksgiving at Mom and Dads. So...here it is. PS I WILL be making this again maybe even before Turkey Day.
For the make ahead, I spread the potatoes in the dish, poured the maple syrup on the top then covered it and put it in the fridge to top and bake when I got home.


Baking...and believe me it tastes and smells better than it looks...yes, better.

Best Recipes Ever--Whipped Sweet Potatoes with Maple Pecan Topping

Do the make ahead method, cover it and put in the fridge and just bake it the extra 10 minutes at the end. Works like a charm.


Bre's Signature Chicken
So next thing I did was cut the pockets in the chicken breast and make up the cream cheese stuffing for the chicken and put it in the fridge.
When stuffing chicken you always cut a pocket in the thickest part of the chicken breast, be sure you don't go all the way through or all of your stuffing will melt out. For this recipe we wrap the cream cheese filling in a slice of smoked Prosciutto, which is an extra little barrier to help keep that filling in the chicken.

for 4 Chix Breasts
1/2 c cream cheese, softened
2 oz chopped frozen spinach, thawed and all the water squeezed out
2 cloves of minced garlic
Chopped Sun dried Tomatoes, as much or little as you like
1/2 tsp Greek Seasoning
S&P
4 Slices of Smoked Prosciutto

Mix all together in a bowl until well mixed, Spread some filling on the slice of prosciutto and roll it up.

Stuff the roll-up into the pocket you cut into the chicken breast. Pull the top part of the chicken breast as far down over the roll-up as you can to keep it from melting out during baking. Repeat for each chicken breast, and place on parchment lined baking sheet. Sprinkle with S&P and Greek Seasoning.

From here you can cover and put in the fridge if you are making this ahead of time, or put it in a pre-heated 375 degree oven, and bake until juices run clear and has an internal temp of 160.



Sauteed Veggies
Well its just that! I took whatever veggies I had in house, added a tsp of minced garlic. (1tsp=1clove..for future reference) some lemon zest a squeeze of lemon juice. Chopped all the veggies before hand and put them in the fridge until 10 minutes before I was ready to serve dinner. This particular night I used baby carrots whole so I steamed them a bit before hand to get the cooking process going. You could always thinly slice them and just throw them right in the pan at the same time as everything else.

Put some Olive oil in your frying pan and get it hot. Add the garlic and swish it around your pan for a minute. Then dump in all the veggies, the lemon zest and give a little squeeze of lemon juice (or 2 tsp), saute until they are tender crisp. You want them to still be bright and a little crunch but cooked.

The veggies I used this night were: celery, onions, green pepper, baby carrots and frozen corn.

And the Grand Finale...Creme Brulee

Super easy, quick and impressive dessert. Might take a couple tries to get the knack of cooking it perfectly, just be sure to experiment at least once before you serve to company. Another great thing about this recipe is it's super cheap to make.

3/4 cup heavy cream
2 egg yolks
1/2 tsp vanilla extract, or 1/2 vanilla bean
1 tbsp, 2 tsp sugar, divided
about 1/4 c sugar for the topping

preheat oven to 300 degree and prepare boiling water.
In a pot over medium heat, combine cream, and 2tsp of sugar. Cook stirring occasionally until you see small bubbles around the edge of the pot. You just want to heat the cream and dissolve the sugar, do not boil the cream mixture. Takes approx 5-6 minutes. Set aside.
In the bowl of your mixer beat the 2 egg yolks with vanilla and 1 tbsp of sugar until smooth and light. SLOWLY and a little at a time, pour the hot cream into the eggs with the mixer running on low. Beat continuously until blended, keeping the mixer on low. If you use high speed your creme brulee will get frothy and you'll lose some volume.
Strain through a sieve, into a measuring cup with a spout for easy pouring.

Put your oven safe ramekins into a shallow pan, and divide mixture between them.
Put your pan into the oven and pull the rack out, now pour your boiling water around the ramekins being careful not to get any water in your creme brulee. Cover the pan with tin foil. This is called a water bath, you are essentially going to cook the custard with the water and steam.
Bake until JUST set, about 25-30 minutes. To check tap or shake the ramekins and if just the center barely jiggles, you're good to go. If the whole thing jiggles or if there is any liquid you need to cook a little longer. Be very careful taking the tinfoil off, there will be steam.
Chill 2-3 hours.


When its cooked the top should be smooth and only the center should jiggle the slightest bit

When you're ready to serve sprinkle the top with sugar and torch until the sugar is brown and bubbly. You want to make a hard crust on the top of your custard. When you eat it the top should be crunchy and warm and the inside smooth and cool.  Only torch at serving time!

Hubby's Birthday!

Today is my Husband's 25th Birthday! Quarter Century, its a big one! He is the most supportive person in my life, and I definitely wouldn't be where I am now without him. He is the most amazing Daddy to our beautiful daughter, Charlee. Being an amazing Dad, made me fall even more in love with him! I love you Tyler!! And I hope you have a very very Happy Birthday!

All those things said  Hubby isn't much for Parties (I know right?! Proof that opposites attract) So last year we had a surprise BBQ for him, ended up being everyone in the living room waiting for him to come home from work, me outside BBQ'ing and when I came in he was in the kitchen eating and everyone was still in the living room. Surprise!!(?) This year the weekend of his Birthday was the same weekend as our Besties Bachelor/Bachelorette Parties which we were a part of planning, so I figured that would be enough celebrating for one week.
