Old Fashioned Blueberry Muffins

This is a very traditional, "straight from Grandma's kitchen" recipe. These muffins won't look anything like the muffins you buy at Tim Horton's or McDonald's with the giant perfect tops. But they taste just as good! I made these muffins for hubby's lunches, something healthy for him to take and eat on the go. 2 tips for you on this recipe

1) do NOT over mix it, its going to be lumpy and look weird, but that's what makes them so light.
2) Next time I would sprinkle the top with a little bit of coarsesugar before baking.




To me they look very rustic and old fashioned, but still delicious!

Old Fashioned Blueberry Muffins

1 3/4 c flour
1 tbsp Baking Powder
1/2 tsp Salt
1/4 c margarine, softened
1/2 c + 2 tbsp sugar
1 egg
3/4 c buttermilk (or milk)
1 tsp vanilla

1 c blueberries, fresh or frozen
1 tbsp flour

In the bowl of your mixer cream margarine, sugar and egg. Add buttermilk and vanilla, mix.
In a separate bowl mix flour, salt and baking powder. Add dry ingredients to wet and mix until just combined, using the stir setting.

Blueberries tossed in flour, keeps them from sinking to the bottom of the muffin. This goes for any recipe not just this one.


I love blue swirls in my blueberry muffins! Just lets you KNOW they are Blueberry.
 In a small bowl, gently stir blueberries with flour (this prevents them from sinking to the bottom of the muffins) Gently fold in. I like my muffins to have a swirls of blue through them, so I don't really mix them in that gently. I'm not sure why, but they are just better that way.

Spoon the mix into lined muffin tins, until they are filled to the top. try not to squish it down into the tin too much. Bake in a 400 degree oven for 20 minutes.

  1. I never knew about tossing the berries in some flour about baking them. What a great tip! Will have to do that when I make muffins tomorrow. :)
